buckwheat banana bread
I love having this banana bread a during the progesterone dominant phases of my cycle (pre-menstruation + menstruation). It’s a great snack if you’re on the go and a delicious dessert if you’re enjoying it at home !
i n g r e d i e n t s
3 mashed ripe bananas
1 tsp vanilla
2-3 tablespoons melted coconut oil
3 tbsp water
squirt of honey or maple syrup for extra sweetness
1 cup buckwheat flour
pinch of baking soda and/or baking powder
pinch of himalayan sea salt
chopped walnuts or nut of choice
flax, sunflower, and hemp seeds

Combine all wet ingredients into a large mixing bowl. Start by mashing the bananas until smooth. The more ripe the banana, the sweeter the bread. Wait it out and let their peels turn brown before you use them. Patience brings out the sweetness. Mix in the eggs & the rest of the wet ingredients. Slowly mix in all of the dry ingredients. Mix thoroughly until you attained brown goopy goodness. Pour into a greased baking sheet (I typically grease with coconut oil). Sprinkle remaining seeds of choice on top. Feel free to get fancy and creative. Make a pretty mandala or flower. Bake at 350 degrees for about 20 minutes. Let cool & enjoy !
